For some people, raw carrots can be so uninteresting but what if they see it as a carrot cake? Well, this may give different impression. Thus, let’s go further to know how to make this carrot cake because it can be a recipe you never heard before.

First of all, you need to prepare the ingredients that are 240 grams of grated carrots, 120 grams of pineapples which is should be tinned, drained, and chopped previously. Sixty grams of lightly chopped raisins, 60 grams of walnuts that must have been toasted, cooled, and chopped roughly, 240 grams of self-rising flour, ¼ tsp of cinnamon powder, ¼ tsp of nutmeg powder, ½ tsp of baking soda, ½ tsp of baking powder, ½ tsp of vanilla essence, 3 eggs, 210 grams of castor sugar, and 180 ml of cooking oil.

The carrot cake will need lemon cream cheese frosting for additional taste and it is made from 60 grams of butter, 230 grams of cream cheese, 230 grams of sifted icing sugar, and 1 lemon. The lemon’s skin should be grated firstly. So here is the method to cook this tasty carrot cake.

First of all you should sift the flour with soda and baking powder and add castor sugar afterward. Prepare the eggs and whisk the eggs in a separate bowl until it is frothy. And then, you can add the vanilla essence. Next, pour the egg mixture into the flour you have prepared at the beginning of the method and stir well. Add the grated carrots and cooking oil. Then, you add in the chopped pineapples and stir it thoroughly. After you think it is already well-stirred, you can add in the raisins and walnuts. Finally, pour the mixture into the greased and floured tray. Put it into the preheated microwave at 170°C and bake it for about 45 minutes. After the time is over, you can remove from the oven and let it to cool.

Meanwhile, you can prepare the frosting by putting the cream cheese and butter together in a bowl and mix it with an electric mixer. While blending it with low speed, you can add the icing sugar gradually. Keep the beating and stop when it is smooth already. Afterward, add vanilla essence and the grated lemon and beat it slowly one more time until it well-blended. When it is done, you can apply the frosting on top of the carrot cake. The carrot care is ready to serve.
